Simple Chicken Recipe for Philosophers

For 4 people
1 chicken cut into 8 pieces
150g of Comté cheese
10cl of dry white wine
400g of fresh cream
1 soupspoon Dijon mustard
1 teaspoon paprika

3 soupspoons breadcrumbs
50g butter
Salt, pepper
To be eaten with a bottle of Côtes-de-Beaune Rouge
Melt the butter in a browning skillet on a high flame. Brown the chicken. Season with salt, pepper and paprika. When the pieces are very brown, cover them and leave to cook 30 minutes on a low flame.
Reserve the pieces in a gratin dish. Grate the cheese.
Draw off the cooking grease and deglaze the browning skillet using white wine on a medium heat (i.e. pour in the wine and mix
with the greases). Put the cheese in and mix with a wooden spatula (keep some of the grated cheese back forthe finish). Allow the cheese to melt then add the crème fraîche. Bring to the boil and add the mustard.
Pour the sauce onto the chicken. Sprinkle on breadcrumbs and grated cheese and place in a very hot (240° - th.8) for approximately 15 minutes.
Eat and go to bed
